
This is quite possibly the easiest, tastiest and healthiest dinner I’ve made in a while. Home-made veggie pizza with a puff pastry crust that makes the whole dish very, very light yet satisfying.
All you need to do is round up some veggies (I like to use one red bell pepper, one big onion, about 100g of button mushrooms and a head of broccoli and some chopped garlic), tomato paste (I like the Leggo’s garlic and herb, about $3 a bottle), grated swiss cheese ($3.99 a packet at Cold Storage) and puff pastry (about $5 for five ready-rolled frozen sheets from Phoon Huat).
Pre-heat the oven at 200 deg C. Follow the directions on the pastry packaging to thaw the pastry. When it’s ready to use, fold in the edges of the square about 0.5 inch each. Prick the base of the pastry with a fork. Bake for 10min. (Get ready two of these cos the veg is enough to cover two squares!)
Now for the veggies. Heat oil in a wok, add the garlic and let it brown. Then dump the rest of the veggies in and stir fry till tender. Scoop out from wok and let cool.
Finally, assembly. Take the pre-baked pastry and spoon tomato paste within the boundary of the raised edges. Dump half the veggies on and then sprinkle swiss cheese on top. Baked for another 5-10min, depending on how burnt you want your cheese! Do the same with the other pastry base.
How healthy is it? Well, it contains four of the 33 healthiest foods on earth.

Two pizzas should be enough to feed two hungry people. I ate 3/4 of one and Damo ate the remaining 1 1/4 and we were both thoroughly stuffed till the next morning.
It even sustained me through my intervals sesh this mornin of 5x Chip Bee loops (about 1k) on 5min 20sec (time includes rest) sandwiched between about 3k of warming up and cooling down.
